Every school day thousands of children will eat lunch in the school cafeteria. Whether they pack their own food or buy lunch from the cafeteria, students need a good meal to provide energy for the rest of their school day. The challenge facing the school nutritionist is to provide healthy lunch options that students will actually want to eat.
Carolyn Childs, Director of Nutrition for the Hamilton County Department of Education has worked in her field for decades and describes some of the changes and challenges her department faces each and every day of the school year.
